Vinification Manual harvest, gravity vatting. De-stemmed and pressed with no crushing. Wild yeast fermentation. Natural vinification without œnological inputs. 10-day vatting in foudre (concrete tank), where it ages for 11 months. No fining done, but filtered gently before bottling on the 12th of March 2021.
