Vinification Grapes were harvested by hand during the second week of October, crushed with stems and vinified in concrete with daily pumpovers- no additions- 25 days maceration. Clarification followed by a 20-30 day period of malolactic fermentation then took place before resting in 500l French oak barrels for one-year before bottling.
