Vinification : Grapes processed by traditional treading leading to fermentation with indigenous yeast. After minimal extraction, the grapes were pressed directly into used French oak barrels (500, 400 & 225 L), where malolactic fermentation took place until the following spring. There they aged in barrel for eighteen-months, followed by a further three-months in stainless steel before bottling in August 2019.
