Farming Biodynamic
Vinification Grapes are hand harvested, destemmed and crushed, followed by seven days maceration. Fermented in stainless steel tanks and a 2,000 litre chestnut barrel using the natural wild yeast with no additions or corrections. The must was made inert in order to prevent excessive oxidation. No malolactic fermentation. The wine is stored outside for several months in winter to naturally stabilise and clarify it.
