Vine Age 1 hectare of 10-year old co-planted vines of Chenin Blanc & Sauvignon Blanc; & Bouysselet Blanc grafted on 30-year-old rootstock.

Farming Certified Biodynamic

Vinification Hand-picked at the beginning of September. destemmed and crushed to extract the free run juice before pressing and wild yeast fermentation. Bouysselet is vinified separate from Chenin and Sauvignon, which are vinified together. Malolactic fermentation and maturing takes place in concrete vats for six-months before racking, slight filtration and minimal sulphur added before bottling.
