Vinification Manual wine harvest. Gravity vatting, de-stemming before crushing, direct running off of the juices by bleeding to stainless steel tanks. Racking of the must for a night. Beginning of the spontaneous fermentation at a controlled temperature, around 18°C. Natural vinification, without œnological inputs. Spontaneous malolactic fermentation takes place.
Aged for seven-months on the fine lees of Bouysselet Blanc. Filtered and bottled on the 11 of March of 2021. Minimal sulphur added during filtration.
