Vinification Hand- picked in the third week of September. Grapes are destemmed and crushed and left to macerate on skins for three days. Wild fermentation, no additions; minimal sulphur added to prevent excessive oxidisation. No malolactic fermentation, filtration nor fining. The cool winter months allows for the separation of solid from liquid, with the latter being removed to be left with a clean and stable wine for bottling.
