Supplementary grapes are taken from old vineyards across the provinces of Burgos, Valladolid and Segovia.

Vinification Grapes are hand harvested, destemmed and crushed- no maceration. Fermented in stainless steel tanks and French oak barrels with wild yeast. No corrections or additions; the must was made inert in order to prevent oxidation. No malolactic fermentation. The wine is left outside for several months to allow the cold of the winter to clarify and stabilise it.
