Vinification Hand-harvested, destemmed grapes were crushed and left with the skins to be allowed to ferment natural in large open vats. On the 8th of April the grapes were pressed and the juice kept cool to ensure a slow fermentation. On the 5th of May the wine was racked to 500 litre oak puncheons and tanks, where it aged until the 4th of January in the new year. On this date the wine in was racked again with sulphur added. Wine was bottle with the use of gravity, unfiltered, on the 12th of February.
