Vinification Hand-harvested, 30% whole bunch & 70% destemmed without crushing to small open vats where wild fermentation was allowed to take place. Plunging took place on a daily basis and the temperature reached 34 degrees Celsius at its peak. On April 4th the wine was pressed to tank to settled before being racked under gravity to small French oak (15% new). The wine was allowed to age in oak until July 2018 when it was racked. Assemblage occurred in July that year with the addition of sulphur before being bottled at the end of that month without fining nor filtration.
